Ingredients

4 large eggs

2 tablespoons milk

1 tablespoon butter

1/2 cup spinach, chopped

1/4 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1/4 teaspoon salt

1/4 teaspoon black pepper

Fresh herbs (such as chives or parsley), for garnish

1/2 avocado, sliced, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease four ramekins with butter or non-stick spray.

    Prepare the Egg Mixture: In a medium bowl, separate the egg whites from the yolks. Whisk the yolks with milk, salt, and pepper until well combined.

      Beat the Egg Whites: In a clean bowl, beat the egg whites with a hand mixer or whisk until stiff peaks form. This will take about 3–5 minutes.

        Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites, being careful not to deflate the whites. The mixture should remain airy.

          Add Vegetables: Fold in the chopped spinach, cherry tomatoes, and feta cheese until evenly distributed.

            Distribute into Ramekins: Spoon the mixture evenly into the greased ramekins, filling them to about three-quarters full.

              Bake: Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 20-25 minutes, or until the soufflés are puffed and lightly golden.

                Serve: Carefully remove the ramekins from the water bath and let them cool for a minute. Garnish with fresh herbs and serve with avocado slices on the side if desired.
