4 large eggs

1/4 cup milk (whole or 2%)

1/2 cup shredded cheese (cheddar, Gruyère, or your favorite)

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup cooked spinach (fresh or frozen, squeezed dry)

1/4 cup diced bell peppers (any color)

1/4 cup chopped green onions

Cooking spray or butter, for greasing

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease four ramekins (about 8 oz each) with cooking spray or butter.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs. Add the milk, salt, black pepper, garlic powder, and onion powder. Whisk until well combined and frothy.

      Fold in Ingredients: Gently fold in the shredded cheese, cooked spinach, diced bell peppers, and green onions. Be careful not to break the air bubbles you just created while whisking.

        Fill Ramekins: Divide the egg mixture evenly among the prepared ramekins, filling each about three-quarters full.

          Bake: Place the ramekins on a baking sheet and transfer them to the oven. Bake for 20-25 minutes, or until the soufflés are puffed up and golden brown on top. They should be set in the middle but still slightly jiggly (they will firm up as they cool).
