Ingredients

2 (14.75 oz) cans of pink salmon, drained and flaked

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup finely chopped green onions

1/4 cup mayonnaise

1 large egg

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1/4 cup fresh parsley, finely chopped (optional)

Vegetable oil for frying

Instructions

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped green onions, mayonnaise, egg, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and cayenne pepper. Mix well until all ingredients are thoroughly integrated.

    Season the mixture with salt and black pepper to taste. If using, fold in the fresh parsley for added flavor and color.

      Shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should be able to make around 8 patties.

        Heat a generous amount of vegetable oil (about 1/2 inch deep) in a large skillet over medium heat. The oil is ready when it shimmers or a small piece of batter sizzles when dropped in.

          Carefully place the salmon patties in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy.

            Once cooked, transfer the patties to a plate lined with paper towels to absorb excess oil.

              Serve immediately with lemon wedges and your favorite dipping sauce, such as tartar sauce or a spicy remoulade.
