Ingredients

1 cup roasted butternut squash (cooled)

1 banana (ripe)

1 cup almond milk (or milk of choice)

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon maple syrup (or honey)

1 tablespoon almond butter (optional)

1/2 teaspoon vanilla extract

Ice cubes (optional, for a chilled smoothie)

Pinch of sea salt

Instructions

Start by roasting the butternut squash: Preheat your oven to 400°F (200°C). Cut the squash in half, scoop out the seeds, and place it cut-side down on a baking sheet with parchment paper. Roast for about 30-40 minutes or until tender. Allow it to cool before using.

    In a blender, combine the roasted butternut squash, ripe banana, almond milk, cinnamon, nutmeg, maple syrup, almond butter (if using), vanilla extract, and a pinch of sea salt.

      Blend on high speed until the mixture is smooth and creamy. If you prefer a colder smoothie, you can add ice cubes and blend again until well incorporated.

        Taste and adjust sweetness or spice level if desired; you can add more maple syrup or spices to suit your palate.

          Pour the smoothie into a glass and enjoy immediately. For an extra touch, sprinkle a bit of cinnamon on top as a garnish.
