Ingredients

1 lb (450g) boneless skinless chicken thighs, cut into bite-sized pieces

2 cups fresh broccoli florets

3 tablespoons soy sauce

2 tablespoons sriracha or your favorite hot sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vegetable oil

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon rice vinegar

Salt and pepper to taste

Cooked rice or quinoa for serving (optional)

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with 1 tablespoon soy sauce, 1 teaspoon sriracha, and a pinch of salt and pepper. Let it marinate for 15 minutes.

    Prepare the Sauce: In a separate bowl, whisk together the remaining soy sauce, sriracha, sesame oil, rice vinegar, cornstarch, and water until smooth. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Stir-fry the Veggies: In the same skillet, add more oil if necessary, then add the minced garlic and grated ginger. Sauté for 30 seconds until fragrant. Add the broccoli florets and stir-fry for about 3-4 minutes until they are bright green and tender-crisp.

          Combine Everything: Return the cooked chicken to the skillet along with the prepared sauce. Stir everything together, cooking for an additional 2-3 minutes until the sauce thickens and coats the chicken and broccoli nicely.

            Serve: Serve hot over cooked rice or quinoa if desired, and enjoy the spicy flavors!
