Ingredients

  • 4 fillets salmon
  • ¼ cup honey
  • 3 tablespoons Sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cups cooked jasmine rice
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 whole ripe avocado
  • ¼ cup green onions
  • sesame seeds
  • lime wedges

Instructions

  • Marinate the salmon by mixing honey, Sriracha, soy sauce, and rice vinegar, then coat the fillets and refrigerate for 30 minutes.
  • Preheat grill or oven to 400°F (200°C). Grill salmon for 5-6 minutes per side or bake for 12-15 minutes until cooked.
  • Heat the reserved marinade in a saucepan until boiling, then simmer for 3-5 minutes until thickened.
  • In serving bowls, add 1 cup of jasmine rice as the base.
  • Top the rice with steamed broccoli, shredded carrots, and avocado slices.
  • Place a salmon fillet on top of the vegetables in each bowl.
  • Drizzle the thickened marinade over the salmon.
  • Garnish with sliced green onions and sesame seeds.
  • Serve with lime wedges for added zest.
