Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

3 jalapenos, finely chopped (seeds removed for less heat)

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon honey (optional, for sweetness)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Instructions

Prepare the Marinade: In a bowl, whisk together the olive oil, chopped jalapenos, minced garlic, ground cumin, smoked paprika, onion powder, salt, black pepper, honey (if using), and lime juice.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Preheat the Grill: Heat your grill to medium-high heat. If you’re using a stovetop, preheat a grill pan or skillet over medium-high heat.

Cook the Chicken: Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.

Rest and Slice: Once cooked, remove the chicken from the heat and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist.

Garnish and Serve: Slice the chicken and garnish with freshly chopped cilantro. Serve with lime wedges and your favorite sides, such as rice, salad, or grilled vegetables.
