Ingredients

  • 200 g spaghetti or your preferred pasta
  • 2 cups fresh spinach thoroughly washed and coarsely chopped
  • 3 cloves garlic finely minced
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon red pepper flakes
  • ¼ cup freshly grated Parmesan cheese
  • Salt to taste
  • freshly ground black pepper to taste
  • 1 lemon zest
  • 1 tablespoon freshly squeezed lemon juice
  • Optional: Cherry tomatoes halved, for garnish

Instructions

  • In a large pot, bring salted water to a rolling boil and cook the spaghetti until al dente.
  • Reserve ½ cup of the pasta cooking water before draining the pasta.
  • In a skillet, heat olive oil over medium heat and sauté minced garlic and red pepper flakes for 1 minute.
  • Add chopped spinach to the skillet and cook for 2-3 minutes until wilted.
  • Season with salt and black pepper.
  • Combine the drained pasta with the sautéed spinach in the skillet.
  • If needed, stir in reserved pasta water to achieve desired consistency.
  • Remove from heat and fold in Parmesan cheese, lemon zest, and lemon juice.
  • Serve topped with extra Parmesan and halved cherry tomatoes.

Notes

For a vibrant garnish, consider adding halved cherry tomatoes.
