Ingredients

1 cup shredded carrots

1 cup sliced cucumber

1 bell pepper (red or yellow), thinly sliced

1 cup bean sprouts

¼ cup roasted peanuts or almonds, roughly chopped

8 rice paper wrappers (optional, for added texture)

For the Spicy Ginger Dressing:

3 tablespoons fresh ginger, grated

2 tablespoons soy sauce or tamari

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon chili garlic sauce (adjust for heat preference)

Fresh lime juice (from 1 lime)

Instructions

Prepare the Dressing: In a small bowl, whisk together the grated ginger, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, chili garlic sauce, and lime juice until well combined. Adjust the seasoning according to your taste, adding more chili sauce for heat or honey for sweetness.

    Assemble the Salad: In a large salad bowl, combine the mixed greens, shredded carrots, sliced cucumber, bell pepper, bean sprouts, and fresh herbs. Gently toss to combine all the ingredients evenly.

      Optional Rice Paper Wraps: If using rice paper wrappers for added texture, soak one wrapper at a time in warm water for about 20-30 seconds until softened.
