Ingredients

1 lb ground lamb (or beef)

1 medium onion, diced

2 cloves garlic, minced

2 cups carrots, diced

1 cup frozen peas

2 cups mashed potatoes (prepared with butter and cream)

1 cup beef or vegetable broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Olive oil for cooking

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

    In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the diced onion and sauté until translucent, about 2-3 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the ground lamb (or beef) to the skillet, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.

          Stir in the diced carrots and cook for another 5 minutes until slightly softened.

            Pour in the beef or vegetable broth and Worcestershire sauce, followed by the dried thyme and rosemary. Season with salt and pepper. Bring to a gentle simmer and let cook for about 10 minutes until the mixture thickens slightly.

              Stir in the frozen peas and remove from heat.

                Transfer the meat mixture into a baking dish, spreading it evenly.

                  Top with prepared mashed potatoes, spreading them out to cover the meat mixture and create a smooth surface. Optionally, use a fork to create some texture on the mash for crispy edges.

                    Bake in the oven for 20-25 minutes or until the top is golden brown and the filling is bubbling.

                      Garnish with fresh parsley before serving, and enjoy your festive St. Patrick's Day meal!
