Ingredients

1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon black pepper

1 teaspoon sea salt

Fresh herbs (like rosemary or thyme) for garnish

Optional dipping sauces: chimichurri, garlic aioli, or spicy sriracha mayo

Instructions

Prep the Steak: Begin by patting the sirloin steak cubes dry with paper towels. This will help them sear properly.

Season the Steak: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, black pepper, and sea salt. Add the steak cubes and toss until evenly coated with the marinade. Let it sit for at least 15 minutes to absorb the flavors.

Preheat the Pan: Heat a large skillet or cast-iron pan over medium-high heat. Make sure it’s hot before adding the steak bites to achieve a nice sear.

Cook the Steak Bites: Add the seasoned steak cubes to the hot pan in a single layer, making sure not to overcrowd them. Cook for about 2-3 minutes on each side for medium-rare, or longer if preferred. Reference the internal temperature: 130°F for medium-rare, 145°F for medium.

Remove and Rest: Once cooked to your liking, remove the steak bites from the pan and let them rest on a plate for about 5 minutes. This helps keep them juicy.

Garnish and Serve: Scatter fresh herbs over the steak bites for a pop of color and flavor. Serve them with your choice of dipping sauces for an irresistible treat!
