Ingredients

1 lb flank steak, thinly sliced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups frozen French fries

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1/2 cup sour cream

1/4 cup chopped fresh cilantro

1/4 cup pickled jalapeños (optional)

Salsa for serving

Instructions

Cook the Fries: Preheat your oven according to the instructions on the frozen French fries packaging. Bake the fries until crispy, usually around 20-25 minutes. Set aside.

Prepare the Steak: In a large skillet, heat the olive oil over medium-high heat. Season the flank steak with garlic powder, onion powder, smoked paprika, salt, and pepper. Once the oil is hot, add the steak in a single layer. Cook for about 3-4 minutes, stirring occasionally until the steak is browned and cooked to desired doneness. Remove from heat.

Assemble the Burritos: Lay a tortilla flat on a clean surface. Place a generous amount of cooked fries in the center, followed by a portion of the cooked steak. Sprinkle with both types of cheese — Monterey Jack and cheddar. Add a spoonful of sour cream, some cilantro, and jalapeños if using.

Wrap the Burrito: Fold the sides of the tortilla in, then roll it from the bottom up to encase the filling. Ensure the filling is secured inside.

Grill the Burritos: In the same skillet used for the steak, reduce the heat to medium. Place the burrito seam-side down in the skillet and cook for about 2-3 minutes on each side until the tortillas are golden and crispy, and the cheese has melted.

Serve: Cut the burritos in half and serve warm with salsa on the side.
