Ingredients

For the Steak:

2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

For the Green Sauce:

1 cup fresh parsley leaves

1 cup fresh cilantro leaves

1 garlic clove

1 teaspoon Dijon mustard

1 tablespoon red wine vinegar

1/2 teaspoon chili flakes (optional)

1/3 cup olive oil

Salt and pepper, to taste

For the Mashed Sweet Potatoes:

2 medium sweet potatoes, peeled and cubed

2 tablespoons unsalted butter

1/4 cup milk (or plant-based alternative)

Salt and pepper, to taste

A pinch of nutmeg (optional)

Instructions

Prepare the Mashed Sweet Potatoes:

    - Boil sweet potato cubes in a large pot of salted water until fork-tender, about 15-20 minutes.

      - Drain and return to the pot; add butter, milk, salt, pepper, and nutmeg. Mash until smooth and creamy. Keep warm.

        Make the Green Sauce:

          - In a food processor, combine parsley, cilantro, garlic, Dijon mustard, vinegar, and chili flakes.

            - Pulse to combine, then slowly drizzle in olive oil while processing until smooth. Season with salt and pepper to taste. Set aside.

              Cook the Steak:

                      - Let the steaks rest for 5 minutes before slicing.
