1 pound chicken thighs, boneless and skinless

1 cup jasmine rice

2 cups chicken broth

3 tablespoons soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon cornstarch dissolved in 2 tablespoons water

1 cup broccoli florets (steamed)

1 carrot, julienned

1 green onion, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Rice: In a medium saucepan, combine jasmine rice and chicken broth. Bring to a boil, then cover, reduce heat to low, and let simmer for 15 minutes or until liquid is absorbed. Remove from heat and let stand covered for another 10 minutes.

    Make the Sticky Sauce: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the chicken thighs and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

        Thicken the Sauce: In the same skillet, add the sticky sauce mixture. Bring to a simmer and add the cornstarch mixture. Stir continuously until the sauce thickens, about 2-3 minutes.

          Coat the Chicken: Slice the cooked chicken thighs into strips, then return to the sauce in the skillet. Toss to coat the chicken evenly with the sticky sauce.

            Assemble the Bowls: In serving bowls, layer the cooked jasmine rice, topped with sticky chicken, steamed broccoli, and julienned carrots.
