Ingredients

4 large flour tortillas

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1/2 teaspoon cinnamon

2 tablespoons butter, for frying

Extra sliced strawberries and whipped cream, for serving

Instructions

In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and well combined.

    Spread an even layer of the cream cheese mixture over half of each tortilla, leaving a little space around the edges.

      Layer the sliced strawberries on top of the cream cheese mixture, then fold the tortillas in half to create a quesadilla.

        In a large skillet over medium heat, melt 1 tablespoon of butter. Place 2 quesadillas in the skillet and sprinkle lightly with cinnamon.

          Cook for about 2-3 minutes or until the bottom is golden brown, then carefully flip and cook for another 2-3 minutes on the other side until golden and crispy.

            Repeat with the remaining quesadillas, adding more butter to the skillet if necessary.

              Remove the quesadillas from the skillet and let them cool slightly before slicing into wedges.

                Serve warm with additional sliced strawberries and whipped cream on the side for dipping.
