Ingredients

For the Cupcakes:

1 ¾ cups all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

¾ cup unsweetened cocoa powder

1 cup granulated sugar

½ cup brown sugar, packed

2 large eggs

1 cup buttermilk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the Strawberry Filling:

1 cup fresh strawberries, hulled and diced

¼ cup granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch

For the Chocolate Frosting:

1 cup unsalted butter, at room temperature

3 ½ cups powdered sugar

½ cup unsweetened cocoa powder

¼ cup heavy cream

1 tsp vanilla extract

For Garnish:

Fresh strawberries, sliced

Chocolate shavings

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.

    Prepare the Cupcake Batter: In a large bowl, sift together the flour, baking powder, baking soda, salt, cocoa powder, granulated sugar, and brown sugar. Whisk until well combined.

      Mix Wet Ingredients: In another bowl, beat together the eggs, buttermilk, vegetable oil, and vanilla extract until smooth. Gradually add the wet mixture to the dry ingredients, mixing until just combined.

        Add Boiling Water: Carefully stir in the boiling water until the batter is well mixed (the batter will be thin).

          Bake the Cupcakes: Divide the batter evenly among the cupcake liners, filling each about ⅔ full. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean. Let cool completely on a wire rack.

            Make the Strawberry Filling: In a small saucepan, combine the diced strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture begins to bubble and thicken, about 5-7 minutes. Remove from heat and let cool.

              Prepare the Chocolate Frosting: In a large bowl, beat the room-temperature butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing well. Pour in the heavy cream and vanilla extract, then beat on high speed until the frosting is fluffy and smooth.

                Assemble the Cupcakes: Once the cupcakes have cooled, use a small knife or cupcake corer to remove the center of each cupcake. Fill the center with the cooled strawberry filling, then top generously with chocolate frosting.

                  Garnish and Serve: Decorate each cupcake with a slice of fresh strawberry and sprinkle a few chocolate shavings on top for an extra touch.
