Ingredients

4 large artichokes

1 pound ground beef or lamb

1 cup cooked rice (white or brown)

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs

1 lemon, juiced

1/4 cup olive oil

2 cups chicken or vegetable broth

Instructions

Prepare the Artichokes:

    - Start by rinsing the artichokes under cold water.

      - Cut off the top 1/3 of each artichoke and trim the stem to about 1 inch.

        - Use scissors to trim the thorny tips of the leaves.

          - Rub cut surfaces with lemon juice to prevent browning.

            Make the Filling:

              - In a large skillet, heat a tablespoon of olive oil over medium heat.

                - Add the chopped onion and garlic, sauté until soft and translucent (about 3-5 minutes).

                  - In a mixing bowl, combine the cooked rice, ground beef (or lamb), sautéed onion and garlic, Parmesan cheese, parsley, oregano, paprika, salt, and pepper. Mix until well combined.

                    Stuff the Artichokes:

                      - Gently open the artichoke leaves and fill them with the meat mixture, pressing down lightly to pack it in.

                        - Continue filling until each artichoke is generously stuffed.

                          Prepare for Cooking:

                            - Place the stuffed artichokes upright in a large pot.

                              - Pour the chicken or vegetable broth into the pot until it reaches about 1/2 way up the artichokes.

                                - Drizzle the stuffed artichokes with the remaining olive oil and sprinkle the breadcrumbs on top for added texture.

                                  Cook the Artichokes:

                                    - Cover the pot and bring the broth to a gentle simmer over medium heat.

                                      - Cook the artichokes for 30-40 minutes, or until the leaves can be pulled off easily and the meat is cooked through.

                                        Serve:

                                          - Let the artichokes cool slightly before serving.

                                            - Enjoy warm, drizzled with extra lemon juice if desired.
