Stuffed Breakfast Pretzel Rolls

Ingredients

1 ½ cups warm water (110°F to 115°F)

2 teaspoons active dry yeast

1 tablespoon granulated sugar

4 cups all-purpose flour

1 teaspoon salt

½ cup baking soda

1 large egg, beaten (for egg wash)

1 cup shredded cheddar cheese

1 cup diced cooked bacon or sausage

½ cup scrambled eggs (prepared)

Coarse sea salt (for sprinkling)

Optional: fresh chives, finely chopped (for garnish)

Instructions

In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.

    Gradually add the flour and salt to the yeast mixture, mixing until a dough forms. Knead on a floured surface for about 5-7 minutes, until the dough is smooth.

      Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

        Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

          Once the dough has risen, punch it down and divide it into 12 equal pieces. Flatten each piece into a round disk.

            In a bowl, mix together the cheddar cheese, cooked bacon or sausage, and scrambled eggs. Place a generous tablespoon of filling in the center of each disk, then fold the dough over to seal it, rolling it into a ball.

              In a large pot, bring 10 cups of water to a boil and add the baking soda (careful, it will foam!).

                Boil each pretzel roll for about 30 seconds, flipping halfway through. Remove with a slotted spoon and place on the prepared baking sheet.

                  Brush the tops with beaten egg and sprinkle with coarse sea salt.

                    Bake in the preheated oven for about 15-20 minutes or until golden brown.

                      Remove from the oven and let cool slightly. For an optional garnish, sprinkle fresh chives on top before serving.
