Ingredients

1 cup fresh spinach, chopped

1 cup mushrooms, finely chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 package of crescent roll dough

Olive oil for sautéing

1 egg, beaten (for egg wash)

Instructions

Preheat your oven to 375°F (190°C).

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add the chopped mushrooms and cook for 5-7 minutes until they are soft and moisture has evaporated. Stir in the chopped spinach and cook for another 2 minutes until wilted. Remove from heat and let it cool slightly.

        In a mixing bowl, combine the cooked spinach and mushroom mixture with ricotta cheese, 1/2 cup of mozzarella cheese, onion powder, Italian seasoning, salt, and pepper. Mix well until combined.

          Unroll the crescent roll dough and separate it into triangles. Place a generous tablespoon of the filling at the wide end of each triangle.

            Roll up the dough, starting from the wide end, and tuck the ends to seal in the filling. Place the rolls on a parchment-lined baking sheet.

              Brush the tops of the rolls with the beaten egg to give them a golden finish. Sprinkle the remaining mozzarella cheese on top.

                Bake in the preheated oven for about 15-20 minutes or until the rolls are golden brown and baked through.

                  Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious cheesy spinach and mushroom stuffed rolls!
