2 large red onions, thinly sliced

2 tablespoons sumac

1 teaspoon sea salt

1 tablespoon olive oil

1 tablespoon red wine vinegar or lemon juice

Fresh parsley, finely chopped (for garnish)

Optional: 1 teaspoon honey or agave syrup (for sweetness)

Instructions

Start by slicing the red onions thinly. You can use a sharp knife or a mandolin for even slices.

    In a large mixing bowl, combine the sliced onions, sumac, salt, and olive oil. If you're using honey or agave syrup, add it here.

      Massage the mixture with your hands for a few minutes; this will help soften the onions and infuse them with flavors.

        Add the red wine vinegar or lemon juice and mix well until everything is combined.

          Cover the bowl with plastic wrap and let the onions marinate for at least 30 minutes at room temperature. This will soften them further and enhance their flavor.

            Once marinated, taste and adjust seasoning if necessary. If you prefer, add a bit more sumac or salt.

              Garnish with freshly chopped parsley before serving.
