Ingredients

4 cups fresh corn kernels (about 6 ears of corn)

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

Instructions

Start by shucking the corn and removing the kernels from the cobs. You can do this by slicing down the sides of the cob with a sharp knife.

    In a large pot of boiling salted water, blanch the corn kernels for about 3 minutes, then drain and cool under cold running water. This preserves the bright yellow color and crunchy texture.

      In a large mixing bowl, combine the blanched corn, cherry tomatoes, diced bell pepper, chopped onion, and diced cucumber.

        In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.

          Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

            Add the chopped cilantro and feta cheese, tossing lightly again. Adjust seasoning with additional salt and pepper, if desired.

              Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
