Ingredients

4 lbs beef short ribs

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

2 cups beef broth

1 cup dry red wine (like Cabernet Sauvignon)

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions

Sear the Ribs: Heat the olive oil in a large skillet over medium-high heat. Season the short ribs with salt and pepper. Sear the ribs for about 3-4 minutes on each side until browned. Remove from skillet and set aside.

    Sauté Vegetables: In the same skillet, add the chopped onion and garlic. Cook for about 5 minutes until softened, scraping up any browned bits from the bottom of the pan.

      Prepare the Sauce: In a large bowl, combine the beef broth, red wine, soy sauce, brown sugar, tomato paste, Worcestershire sauce, thyme, rosemary, and a pinch of salt and pepper. Mix well.

        Assemble in Crockpot: Place the seared short ribs in the bottom of the crockpot. Top with the sautéed onions and garlic, then pour the prepared sauce over everything.

          Cook Low and Slow: Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is fork-tender and falls off the bone.

            Finishing Touches: Once cooked, carefully remove the ribs from the crockpot. If desired, strain the sauce to remove solids and return the liquid to the crockpot. You can simmer it on high with the lid off to reduce and thicken for about 15-20 minutes.

              Serve: Plating the beef short ribs with the sauce drizzled on top, and garnish with fresh parsley if using. Serve alongside mashed potatoes or crusty bread to soak up the delicious sauce.
