Ingredients

2 pounds boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned, drained)

1 cup jasmine rice

1 cup low-sodium chicken broth

1/2 cup soy sauce

1/4 cup honey

2 tablespoons apple cider vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

1 red bell pepper, diced

1/2 cup green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

2 tablespoons vegetable oil

Instructions

Marinate the Chicken: In a bowl, combine soy sauce, honey, apple cider vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken thighs, ensuring they are well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Cook the Rice: Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the liquid is absorbed and rice is tender. Remove from heat and let it sit, covered, for another 5 minutes.

      Sauté the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Remove the chicken from the marinade (keeping the marinade for later) and add it to the skillet. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

        Prepare the Sauce: In the same skillet, add the reserved marinade, diced red bell pepper, and pineapple chunks. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.

          Combine: Return the chicken to the skillet and stir to coat it with the sweet and savory sauce. Let it all cook together for an additional 2-3 minutes.

            Serve: Fluff the cooked jasmine rice with a fork and plate it as the base. Top with the pineapple chicken mixture. Garnish with chopped green onions and a sprinkle of sesame seeds.
