Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch fresh ginger, grated

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1/2 cup pineapple chunks (fresh or canned)

1/4 cup soy sauce (low sodium)

3 tablespoons honey

2 tablespoons sriracha (adjust to taste)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/4 cup chopped fresh cilantro

2 green onions, sliced

Salt and black pepper, to taste

Cooked jasmine rice, for serving

Instructions

Marinate the Chicken: In a medium bowl, combine the soy sauce, honey, sriracha, rice vinegar, sesame oil, garlic, and ginger. Add the chicken pieces to the marinade, mix well, and let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Chicken: In a large skillet or wok over medium-high heat, heat the vegetable oil. Once hot, add the marinated chicken (reserving the marinade) and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through.

      Add Vegetables: Stir in the sliced red and yellow bell peppers, and cook for another 3-4 minutes until they are softened but still crisp.

        Add Pineapple and Sauce: Pour the reserved marinade over the chicken and bell peppers. Add the pineapple chunks. Let it simmer for about 5-6 minutes, allowing the sauce to thicken and coat the chicken and vegetables.

          Finish and Serve: Once the sauce has thickened, taste and adjust seasoning if necessary. Remove from heat, and garnish with chopped cilantro and sliced green onions. Serve over cooked jasmine rice for a complete meal.
