Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 cup fresh blueberries (or frozen)

1 teaspoon vanilla extract

1 egg (for egg wash)

Extra sugar for sprinkling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, salt, and granulated sugar. Whisk until well blended.

Cut in Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, quickly work the butter into the flour mixture until it resembles coarse crumbs.

Incorporate Blueberries: Gently fold in the fresh blueberries and make sure they are evenly distributed without crushing them.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk and vanilla extract. Gradually pour this mixture into the dry ingredients, stirring until just combined. Do not overmix; some lumps are okay.

Shape the Biscuits: Turn the dough out onto a lightly floured surface. Pat it down into a rectangle, about 1-inch thick. Use a floured biscuit cutter to cut out the biscuits, re-rolling the dough as needed.

Prepare for Baking: Place the biscuits on the prepared baking sheet. Beat the egg in a small bowl and brush the tops of the biscuits with the egg wash. Sprinkle a little extra sugar on top for a sweet crust.

Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Cool and Serve: Let the biscuits cool on the baking sheet for a few minutes before transferring them to a wire rack. Serve warm plain, or enjoy with butter and a drizzle of honey.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 12 biscuits
