Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 1 cup sweet chili sauce
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 piece red bell pepper thinly sliced
  • 1 cup broccoli florets
  • 1 tablespoon sesame oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 pieces green onions chopped (for garnish)

Instructions

  • In a mixing bowl, combine the sweet chili sauce, soy sauce, honey, minced garlic, and minced ginger. Whisk until blended.
  • Place the chicken breasts in the slow cooker in a single layer. Pour the sauce mixture over the chicken.
  • Add the sliced red bell pepper and broccoli florets around the chicken.
  • Drizzle sesame oil over the mixture, then season with salt and black pepper.
  • Secure the lid and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  • Once cooked, shred the chicken in the slow cooker using two forks and stir to combine.
  • Serve the sweet chili chicken over cooked rice and garnish with green onions and sesame seeds.
