Ingredients

  • 1 ½ lbs boneless skinless chicken thighs
  • ½ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon sesame seeds toasted
  • 2 green onions finely sliced

Instructions

  • Marinate the chicken by whisking together sweet chili sauce, soy sauce, rice vinegar, minced garlic, grated ginger, salt, and black pepper. Coat the chicken thighs and refrigerate for at least 30 minutes.
  • Preheat the oven to 400°F (200°C).
  • Heat vegetable oil in a large oven-safe skillet over medium-high heat. Sear the chicken thighs for 3-4 minutes on each side until golden-brown.
  • Pour the reserved marinade over the chicken in the skillet and ensure each piece is well coated.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove the skillet from the oven and garnish with toasted sesame seeds and sliced green onions.
  • Serve hot with steamed rice or stir-fried vegetables.
