Ingredients

2 large sweet potatoes, peeled and diced

1 cup spinach, roughly chopped

6 large eggs

1 cup milk (or plant-based milk)

1 cup shredded cheddar cheese (or dairy-free alternative)

1/2 cup diced bell peppers (any color)

1/2 cup diced onion

2 cloves garlic, minced

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

2 tbsp olive oil

Fresh herbs (like parsley or chives) for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sweet Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and lightly browned.

      Sauté the Vegetables: Add the diced onion, bell peppers, garlic, and spinach to the skillet with the sweet potatoes. Sauté for an additional 3-4 minutes until the onions are translucent and spinach is wilted.

        Mix the Egg Mixture: In a large bowl, whisk together the eggs, milk, paprika, salt, black pepper, and cayenne pepper (if using) until well combined.

          Combine Ingredients: In a greased 9x13 inch baking dish, layer the sautéed sweet potato and vegetable mixture evenly. Pour the egg mixture over the top, making sure it covers all the veggies. Sprinkle cheddar cheese evenly across the top.

            Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.

              Garnish and Serve: Once cooked, remove from the oven and let it cool for a few minutes. Garnish with fresh herbs and serve warm.
