Ingredients

12 large corn tortillas

1 lb ground beef (or turkey for a healthier option)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

2 cups salsa (mild or spicy based on preference)

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic, cooking for an additional minute until fragrant. Stir in the ground beef, breaking it apart with a spatula, and cook until browned. Drain any excess fat.

      Season the Meat: Sprinkle the taco seasoning over the browned meat, adding a little water (about 1/4 cup) as required, and cook for another 5 minutes, stirring occasionally until well combined. Remove from heat.

        Layer the Ingredients: In a 9x13 inch baking dish, spread a little salsa on the bottom to prevent sticking. Layer 3 tortillas on the bottom. Spread half of the meat mixture over the tortillas, followed by 1/3 of the remaining salsa, half of the black beans, and half of the corn.

          Cheese It Up: Add 1 cup of the cheddar cheese and 1/2 cup of the Monterey Jack cheese on top. Spread a layer of sour cream over the cheese.

            Repeat Layers: Repeat the layering process as follows: 3 more tortillas, the remaining meat mixture, 1/3 of salsa, remaining black beans, remaining corn, and top with another cup of cheddar and 1/2 cup of Monterey Jack cheese. Finish with a final layer of tortillas, the rest of the salsa, and the remaining cheese.

              Bake It: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 20 minutes, then remove the foil and bake for another 15-20 minutes, or until the cheese is bubbly and golden brown.

                Cool & Serve: Let the taco lasagna cool for about 10-15 minutes before slicing. Garnish with fresh cilantro and sliced jalapeños, if desired. Serve with additional sour cream or avocado on the side.
