Ingredients

4 boneless, skinless chicken breasts

½ cup tahini

¼ cup soy sauce or tamari (for gluten-free)

2 tablespoons honey or maple syrup

2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon ground black pepper

1 lemon, zested and juiced

1 cup chicken broth

1 cup chopped fresh parsley, for garnish

Salt to taste

Instructions

Prepare the Sauce: In a mixing bowl, combine tahini, soy sauce, honey, minced garlic, cumin, smoked paprika, black pepper, lemon zest, and lemon juice. Mix well until smooth.

    Set Up the Slow Cooker: Place the chicken breasts at the bottom of the slow cooker. Season with salt to taste.

      Add Sauce and Broth: Pour the tahini mixture over the chicken. Add the chicken broth around the sides.

        Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked.

          Shred the Chicken: After cooking, use two forks to shred the chicken directly in the slow cooker. Stir well to combine the chicken with the sauce.

            Serve: Spoon the tahini chicken onto plates or into bowls. Garnish with chopped fresh parsley before serving.
