Ingredients

10-12 fresh strawberries (or any seasonal fruits, like grapes or mandarin slices)

1 cup granulated sugar

1/4 cup water

1 tsp lemon juice (optional, for a hint of acidity)

1/2 cup sesame seeds (optional, for coating)

Wooden skewers or bamboo sticks

Instructions

Prep the Fruit: Wash and dry the strawberries thoroughly. If using other fruits, ensure they are clean and dry as well. Insert wooden skewers into the fruit, leaving space at the end for handling.

    Make the Sugar Syrup: In a medium saucepan, combine granulated sugar, water, and lemon juice (if using). Stir the mixture over medium heat until the sugar completely dissolves.

      Boil the Syrup: Increase the heat and bring the mixture to a boil without stirring. Allow it to boil until it reaches the hard crack stage (300°F or 150°C) on a candy thermometer, which usually takes about 6-8 minutes. Keep an eye on it to prevent burning.

        Coat the Fruit: Once the syrup has reached the proper temperature, remove it from the heat immediately. Quickly dip each fruit skewer into the hot syrup, swirling it to coat the fruit evenly.

          Set the Candy Coating: Place the coated fruit on a parchment-lined baking sheet. If you want to add sesame seeds, sprinkle them over the syrup-coated fruit while it’s still hot.

            Cool and Serve: Allow the Tanghulu to cool completely at room temperature until the sugar coating hardens and becomes crunchy. Serve immediately for the best texture.
