Ingredients

1 lb (450g) boneless, skinless chicken thighs

1 cup uncooked jasmine rice

2 cups water or chicken broth

1 cup broccoli florets

1 red bell pepper, sliced

1/2 cup snap peas

2 tablespoons vegetable oil

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Instructions

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water or chicken broth. Bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

    Make the Teriyaki Sauce: In a small saucepan over medium heat, combine the soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger. Bring to a slight simmer, then reduce the heat and let it cook for about 5 minutes until slightly thickened. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken thighs and cook for about 6-7 minutes on each side until browned and cooked through. Remove from the skillet and let rest for a few minutes before slicing into strips.

        Sauté the Vegetables: In the same skillet, add the broccoli, red bell pepper, and snap peas. Stir-fry for about 5 minutes or until the vegetables are tender-crisp.

          Combine Everything: Return the sliced chicken back to the skillet with the vegetables. Pour the teriyaki sauce over the chicken and veggies, stirring to combine and heat through for an additional 2-3 minutes.

            Assemble the Bowl: In serving bowls, place a generous scoop of the cooked jasmine rice, followed by the teriyaki chicken and vegetable mixture on top. Drizzle any extra teriyaki sauce over the bowl.

              Garnish: Sprinkle sesame seeds and chopped green onions on top for an extra touch of flavor and presentation.
