Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 package 8 oz cornbread mix
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk
  • 1 large egg
  • for garnish fresh cilantro and sliced jalapeños

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef or turkey until browned.
  • Add the chopped onion and minced garlic, sauté until soft.
  • Stir in black beans, diced tomatoes, corn, chili powder, cumin, smoked paprika, salt, and pepper. Simmer for 5-7 minutes.
  • Prepare the cornbread mix according to package instructions, combining with milk and egg.
  • Grease a 9x13 inch baking dish and spread the beef mixture evenly.
  • Pour the cornbread batter over the beef mixture, spreading to cover.
  • Sprinkle shredded cheddar cheese on top.
  • Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  • Let cool for a few minutes, then garnish with cilantro and jalapeños before serving.
