Thanksgiving Wild Rice

Ingredients

1 cup wild rice, rinsed and drained

4 cups vegetable broth

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup mushrooms, sliced (shiitake or cremini work well)

1 cup diced butternut squash (1/2-inch cubes)

1 cup fresh cranberries (or dried cranberries if out of season)

1/2 cup walnuts, chopped

1 teaspoon dried thyme

1 teaspoon dried sage

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

In a large saucepan, bring the vegetable broth to a boil. Add the rinsed wild rice, reduce heat to a simmer, cover, and cook for about 40-45 minutes or until the rice is tender and the grains have burst open. Drain any excess liquid and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 5 minutes until translucent.

      Incorporate the sliced mushrooms and diced butternut squash into the skillet, cooking for an additional 8-10 minutes or until the squash is tender and the mushrooms are golden.

        Stir in the fresh cranberries, cooked wild rice, walnuts, dried thyme, and dried sage. Season with salt and pepper to taste. Mix gently until all ingredients are well combined and heated through.

          Remove from heat, garnish with freshly chopped parsley, and serve.
