1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons Italian seasoning

1 teaspoon sugar

Salt and pepper, to taste

8 oz lasagna noodles, broken into pieces

1 (15 oz) container ricotta cheese

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley, for garnish

Instructions

In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground beef or sausage and cook until browned, about 5-7 minutes. Drain excess fat.

    Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the crushed tomatoes and chicken or vegetable broth. Stir in the Italian seasoning, sugar, and a pinch of salt and pepper to taste.

        Bring the mixture to a simmer, then add the broken lasagna noodles. Cook according to package instructions, or until the noodles are al dente, typically around 10-12 minutes.

          While the noodles cook, in a separate bowl, mix together the ricotta cheese, half of the mozzarella cheese, and the grated Parmesan cheese. Season with a little salt and pepper.

            Once the noodles are done, ladle the soup into bowls, and dollop a generous spoonful of the cheese mixture on top.

              Sprinkle the remaining mozzarella cheese over the soup, allowing it to melt slightly before serving. Garnish with fresh basil or parsley.
