The Best Salmon Patties

Ingredients

2 cans (14.75 oz each) wild-caught salmon, drained and flaked

1/2 cup breadcrumbs (or crushed saltines)

1/4 cup finely chopped green onions

1/4 cup mayonnaise

1 large egg, beaten

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon dried dill or fresh dill, chopped

Salt and pepper to taste

2 tablespoons olive oil (for frying)

Instructions

In a large mixing bowl, combine the flaked salmon, breadcrumbs, green onions, mayonnaise, beaten egg, Dijon mustard, lemon juice, garlic powder, and dill. Season with salt and pepper.

    Gently mix the ingredients until fully combined, being careful not to mash the salmon too much.

      Form the mixture into patties, about 1/2 inch thick. You should be able to make approximately 8 patties.

        Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the patties carefully to avoid splattering.

          Cook the patties for about 4-5 minutes on each side or until they're golden brown and crispy.

            Once cooked, transfer the patties to a plate lined with paper towels to absorb excess oil.

              Serve warm with your favorite dipping sauce or on a bun with lettuce and tomato. Enjoy!
