Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons baking powder

1/2 teaspoon salt

1 cup milk (any type)

2 large eggs

1/4 cup melted butter (plus extra for cooking)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional toppings: whipped cream, fresh berries, maple syrup

Instructions

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt. Mix well to combine all the dry ingredients.

    In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract until well combined.

      Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined. Be careful not to over-mix; a few lumps are perfectly fine!

        Stir in the chocolate chips until evenly distributed throughout the batter.

          Heat a non-stick skillet or griddle over medium heat and add a little butter to coat the surface.

            Once hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set.

              Flip the pancakes and cook for an additional 1-2 minutes on the other side until they are cooked through and have a nice, rich, dark color.

                Transfer pancakes to a plate and keep warm. Repeat with the remaining batter, adding more butter as needed to the skillet.

                  Serve warm with your choice of whipped cream, fresh berries, or a drizzle of maple syrup for an extra special treat. Enjoy!
