Ingredients

  • 9 no-boil lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach finely chopped
  • 1 medium zucchini thinly sliced
  • 1 medium red bell pepper diced
  • 1 cup mushrooms sliced
  • 3 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine ricotta, half of the mozzarella, Parmesan, spinach, oregano, basil, garlic powder, salt, and pepper.
  • Coat the bottom of a 9x13 inch baking dish with marinara sauce.
  • Layer three noodles on top, spread one-third of the cheese mixture, add zucchini, bell pepper, and mushrooms, then top with marinara sauce.
  • Repeat layering two more times: noodles, cheese mixture, vegetables, marinara sauce.
  • For the final layer, place three noodles, cover with remaining marinara, and sprinkle with remaining mozzarella.
  • Cover with aluminum foil to retain moisture.
  • Bake for 25 minutes, then remove foil and bake for another 15 minutes until cheese is bubbly and golden.
  • Let the lasagna rest for 10 minutes before slicing.
  • Garnish with fresh basil leaves if desired.
