  • 1 cup unsalted butter softened
  • ¾ cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup toffee bits
  • ½ cup chopped pecans or walnuts
  • flaky sea salt for topping

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until smooth.
  • In another bowl, whisk together the flour, baking soda, and sea salt, then gradually add to the wet mixture.
  • Fold in the toffee bits and nuts until evenly distributed.
  • Drop rounded portions of dough onto the baking sheet, leaving space between each cookie.
  • Sprinkle flaky sea salt on top if desired.
  • Bake for 10-12 minutes until edges are golden and centers are slightly underbaked.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
