Ingredients

For the Pizza Dough:

2 cups all-purpose flour

1 packet (2 1/4 teaspoons) active dry yeast

3/4 cup warm water (about 110°F/43°C)

1 tablespoon olive oil

1 teaspoon granulated sugar

1 teaspoon sea salt

For the Tofu Curry Topping:

14 oz extra-firm tofu, cut into small cubes

1 tablespoon coconut oil

1 medium onion, finely chopped

2 cloves garlic, minced

inch piece fresh ginger, grated

1 tablespoon curry powder

1 teaspoon ground turmeric

1/2 cup coconut milk

1 bell pepper, sliced (choose either red or yellow for sweetness)

1 cup fresh spinach leaves

Salt and black pepper, to taste

Fresh cilantro, for garnish

Optional: Red pepper flakes for an extra kick

For the Pizza:

1 cup shredded mozzarella cheese (or a dairy-free substitute)

1/4 cup fresh cilantro, chopped, for garnishing after baking

Dough Preparation:

    Start by combining the warm water, sugar, and yeast in a small bowl. Allow this mixture to sit for about 5 minutes until it becomes frothy, indicating the yeast is activated.

      In a large mixing bowl, mix together the flour and salt. Create a well in the center and pour in the yeast mixture along with the olive oil.

        Stir the mixture until it forms a cohesive dough. Transfer the dough to a floured surface and knead for 5-7 minutes until it is smooth and elastic.

          Place the kneaded dough into a greased bowl, cover it with a damp cloth, and set it in a warm space to rise for approximately 1 hour, or until it has doubled in size.

            Tofu Curry Preparation:

              In a large skillet, heat the coconut oil over medium heat. Add the finely chopped onion and cook until it becomes translucent, which should take about 5 minutes.

                Stir in the minced garlic and grated ginger, cooking for an additional minute until aromatic.

                  Add in the cubed tofu along with the curry powder and turmeric. Gently toss to coat the tofu with the spices and cook for about 5-7 minutes until the tofu begins to brown slightly.

                    Pour the coconut milk into the skillet and bring the mixture to a gentle simmer. Add the sliced bell pepper and fresh spinach, stirring until the spinach is wilted. Season with salt and pepper to taste and then remove from the heat.

                      Pizza Assembly:

                        Preheat your oven to 475°F (245°C) and place a pizza stone or a baking sheet inside to heat up.

                          Once the dough has finished rising, punch it down and roll it out on a floured surface to your desired thickness.

                            Carefully transfer the rolled dough onto a piece of parchment paper.

                              Spoon the tofu curry mixture evenly over the dough, followed by a generous sprinkling of mozzarella cheese.

                                Baking the Pizza:

                                  Gently slide the parchment paper with the pizza onto the preheated pizza stone or baking sheet.

                                    Bake the pizza for 12-15 minutes or until the crust is golden brown and the cheese is bubbling with melted goodness.
