Ingredients

For Tomato Confit:

2 cups cherry tomatoes, halved

1/2 cup extra virgin olive oil

4 cloves garlic, smashed

1 teaspoon fresh thyme leaves

1 teaspoon balsamic vinegar

For Whipped Feta:

8 oz feta cheese, crumbled

1/4 cup plain Greek yogurt

2 tablespoons olive oil

1 tablespoon lemon juice

Fresh cracked black pepper

Fresh basil leaves

Instructions

Prepare the Tomato Confit:

              - Blend until smooth and creamy. Scrape down the sides as needed to ensure all ingredients are well incorporated.

                Assemble the Dish:

                  - Spread the whipped feta on a serving platter.

                    - Top with the warm tomato confit, making sure to include the roasted garlic cloves and thyme leaves.
