2 cups ripe tomatoes, diced

1/2 cup red onion, finely chopped

1/4 cup fresh basil, chopped

2 tablespoons balsamic vinegar

1 tablespoon olive oil

1 teaspoon sugar (optional, to taste)

1 French baguette, sliced diagonally

1 garlic clove, halved (for rubbing)

1/4 cup goat cheese or burrata (optional, for topping)

Instructions

Prepare the Tomato Jam: In a medium saucepan, combine the diced tomatoes, red onion, balsamic vinegar, olive oil, and sugar (if using). Season with salt and pepper. Cook over medium heat, stirring occasionally until the mix starts to break down and thickens, about 15-20 minutes.

    Cool the Mixture: Remove the saucepan from heat and let the mixture cool slightly. Stir in the fresh basil, reserving some for garnish.

      Toast the Baguette: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown and crispy.

        Add Garlic Flavor: Once toasted, remove the baguette slices from the oven. Rub the cut side of the garlic cloves over each slice for a subtle garlic flavor.

          Assemble the Bruschetta: Spoon a generous amount of the tomato jam onto each toasted baguette slice. If desired, add a dollop of goat cheese or burrata on top.

            Garnish and Serve: Drizzle with a little extra balsamic vinegar, a dash of olive oil, and sprinkle with the reserved basil. Serve immediately while the bread is warm and crispy.
