Ingredients

12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup black olives, sliced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup feta cheese, crumbled

1/4 cup extra-virgin olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

Salt and pepper to taste

Instructions

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package directions, usually about 3-5 minutes or until they float to the top. Drain and rinse under cold water to cool.

    Prepare the Vegetables: While the tortellini is cooking, prep the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, slice the olives, and finely chop the red onion and basil.

      Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined.

        Combine All Ingredients: In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, cucumber, black olives, red bell pepper, red onion, and basil. Pour the dressing over the salad and toss everything gently until all ingredients are coated.

          Add Feta: Sprinkle the crumbled feta cheese over the salad and give it a final gentle toss to incorporate.

            Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!
