Ingredients

4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons cornstarch

2 tablespoons vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Salt, to taste

1/4 cup fresh chopped cilantro (for garnish)

1 cup pineapple chunks (fresh or canned, drained)

Cooked rice or quinoa, for serving

Instructions

In a bowl, combine the fresh pineapple juice, soy sauce, brown sugar, cornstarch, minced garlic, minced ginger, black pepper, and red pepper flakes. Whisk until smooth and well incorporated.

    In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Season the chicken breasts with salt on both sides.

      Once the oil is hot, add the chicken breasts to the skillet. Cook for about 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C).

        Pour the pineapple glaze mixture over the chicken in the skillet. Stir gently to coat the chicken thoroughly. Add the pineapple chunks to the skillet and bring the mixture to a gentle boil.

          Reduce the heat to low and simmer for about 5-7 minutes, or until the sauce thickens and becomes sticky, and the chicken absorbs some of the flavor.

            Once the sauce has thickened, remove from heat. Slice the chicken breasts before serving.

              Serve the glazed chicken over a bed of rice or quinoa and spoon additional glaze and pineapple chunks on top. Garnish with fresh chopped cilantro.
