Ingredients

1 cup all-purpose flour

1 cup water

1/4 cup unsalted butter

1/4 teaspoon salt

1 teaspoon sugar

4 large eggs

Vegetable oil (for frying)

For the Syrup:

1 cup sugar

1/2 cup water

1 tablespoon lemon juice

1/2 teaspoon rose water or orange blossom water (optional)

Instructions

Prepare the Syrup:

    - In a small saucepan, combine 1 cup of sugar, 1/2 cup of water, and 1 tablespoon of lemon juice.

      - Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.

        - Once boiling, reduce heat and let it simmer for 10 minutes. Remove from heat and stir in the rose water or orange blossom water if using. Allow to cool.

          Make the Dough:

            - In a medium saucepan, combine 1 cup of water, 1/4 cup of butter, 1/4 teaspoon of salt, and 1 teaspoon of sugar. Bring to a boil over medium heat.

              - Once boiling, remove from heat and quickly add in 1 cup of all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a smooth dough.

                - Let the dough cool for a few minutes, then add 4 large eggs one by one, mixing well after each addition until fully incorporated and the dough is smooth and shiny.

                  Fry the Tulumba:

                    - In a deep frying pan or pot, heat vegetable oil over medium heat (about 350°F or 175°C).

                      - Transfer the dough to a piping bag fitted with a star tip. Pipe the dough into 4-5 inch lengths directly into the hot oil, cutting with scissors.

                        - Fry the pieces until golden brown, about 3-4 minutes, making sure to cook them in batches to avoid overcrowding the pot.

                          - Remove from the oil and drain on paper towels.

                            Soak in Syrup:

                              - While the tulumba is still warm, dip each piece into the cooled syrup for about 30 seconds, ensuring that each piece is well coated. Then place them on a serving plate.

                                Serve:

                                  - Allow the syrup-soaked tulumba to sit for a bit before serving. Enjoy them warm or at room temperature as a sweet treat or dessert!
