Ingredients

1 pound ground turkey

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)

2 tablespoons olive oil (for cooking)

2 large eggs

1 ripe avocado, peeled and sliced

Salt and pepper to taste for eggs

Hot sauce (optional, for serving)

Instructions

In a large bowl, combine the ground turkey, breadcrumbs, chopped onion, garlic, smoked paprika, salt, black pepper, and parsley (if using). Mix well until all ingredients are fully incorporated.

    With your hands or a spatula, form the mixture into 4 to 6 equal-sized patties, about 1/2 inch thick.

      Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the turkey patties to the pan and cook for about 5-6 minutes on each side, or until they are browned and cooked through (internal temperature should reach 165°F). Transfer the cooked patties to a plate and cover to keep warm.

        In the same skillet, add the remaining tablespoon of olive oil. Crack the eggs into the skillet and fry to your desired doneness (sunny side up or over-easy is recommended for this dish). Season with salt and pepper to taste.

          To assemble, place each turkey patty on a plate, top with sliced avocado, and finish with a fried egg on top. Drizzle with hot sauce if desired.

            Serve immediately and enjoy your delicious and hearty breakfast!
