Ingredients

1 gallon water

1 cup kosher salt

1/2 cup brown sugar

1 tablespoon black peppercorns

1 tablespoon allspice berries

1 tablespoon juniper berries

5 cloves garlic, crushed

1/2 cup fresh rosemary, chopped

1/2 cup fresh thyme, chopped

1 tablespoon crushed red pepper flakes (optional for a kick)

1 large orange, zested and quartered

1 large lemon, zested and quartered

Instructions

In a large pot, combine the water, kosher salt, and brown sugar. Heat over medium-high heat, stirring occasionally until the salt and sugar dissolve completely.

    Remove the pot from the heat and add the black peppercorns, allspice berries, juniper berries, crushed garlic, rosemary, thyme, red pepper flakes, orange zest, lemon zest, and the quartered citrus fruits. Stir to combine.

      Let the brine cool to room temperature. This may take about 30-45 minutes.

        Once cooled, transfer the brine to a large container or a clean 5-gallon food-grade bucket.

          Submerge the turkey in the brine, ensuring it is completely covered. If necessary, weigh the turkey down with a plate to keep it underwater.

            Refrigerate the turkey in the brine for at least 12 hours, preferably 24 hours, to enhance flavor and moisture.

              After brining, remove the turkey, rinse it under cold water to remove excess salt, and pat dry before cooking using your preferred method.
