Ingredients

2 cups cooked turkey, shredded or cubed

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

2 stalks celery, diced

2 cloves garlic, minced

3 cups chicken or turkey broth

1 cup milk

1/3 cup all-purpose flour

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for a kick)

1 tablespoon olive oil

1 tablespoon butter

2 refrigerated pie crusts (or homemade)

1 egg, beaten (for egg wash)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and celery, and sauté until soft, about 5 minutes. Stir in minced garlic and cook for another minute.

      Make Filling: Sprinkle flour over the vegetables, stirring to combine. Gradually pour in the chicken or turkey broth while stirring continuously to prevent lumps. Add milk, thyme, rosemary, salt, black pepper, and cayenne pepper. Bring to a simmer and cook until the sauce thickens, about 5-7 minutes. Stir in the cooked turkey and mixed vegetables.

        Prepare Pie Crusts: Roll out one pie crust and place it into a 9-inch pie dish. Pour the turkey filling into the crust.

          Top with Second Crust: Cover with the second pie crust. Seal and flute the edges, then cut a few slits in the top to allow steam to escape. Brush the top crust with the beaten egg for a golden finish.

            Bake: Place the pot pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown. Keep an eye on it; if the edges brown too quickly, cover them with aluminum foil.

              Cool & Serve: Remove the pie from the oven and let it cool for about 10 minutes before serving. Enjoy your comforting turkey pot pie!
