Ingredients

2 cups cooked turkey, shredded

8 oz spaghetti or linguine

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

1 cup frozen peas

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

4 tbsp unsalted butter

1/4 cup all-purpose flour

1 tsp dried thyme

1 tsp dried basil

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Instructions

Preheat your oven to 350°F (175°C).

    Cook the spaghetti or linguine according to package directions until al dente. Drain and set aside.

      In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, sauté until translucent (about 3-4 minutes).

        Add the sliced mushrooms and cook until softened, about 5 minutes.

          Stir in the shredded turkey, frozen peas, thyme, basil, salt, and pepper. Mix well and cook for an additional 2-3 minutes.

            In a separate saucepan, melt the remaining butter. Whisk in the flour to make a roux, cooking for 1-2 minutes.

              Gradually whisk in the chicken broth and heavy cream. Cook until the mixture thickens, about 5 minutes.

                Remove from heat and stir in 1/2 cup of Parmesan cheese until melted and smooth.

                  Combine the pasta, turkey mixture, and creamy sauce in a large mixing bowl. Mix until everything is well coated.

                    Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the remaining Parmesan and mozzarella cheese evenly on top.

                      If desired, sprinkle breadcrumbs over the cheese for added crunch.

                        Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

                          Allow to cool for a few minutes before serving. Enjoy your comforting Turkey Tetrazzini!
