Ingredients

2 cups granulated sugar

1 cup water

1 cup cornstarch

1/2 cup lemon juice

1/2 teaspoon cream of tartar

1 tablespoon rosewater (or orange blossom water)

1/3 cup chopped nuts (pistachios, walnuts, or hazelnuts)

1 teaspoon vanilla extract (optional)

Powdered sugar and cornstarch mixture (for dusting)

Instructions

Prepare the Baking Dish: Lightly grease an 8x8-inch baking dish and line it with parchment paper, leaving a bit of overhang for easy removal later. Dust the surface with a mix of powdered sugar and cornstarch to prevent sticking.

    Make the Sugar Syrup: In a medium saucepan, combine the granulated sugar, 1 cup of water, and lemon juice. Stir to dissolve the sugar, then bring to a boil over medium heat. Adjust the heat to maintain a gentle boil, and cook without stirring until the mixture reaches a soft ball stage (about 240°F/115°C on a candy thermometer).

      Combine Cornstarch and Water: In a separate bowl, whisk together the cornstarch and 1 cup of water until smooth. Add the cream of tartar and mix well.

        Thicken the Mixture: Once the sugar syrup has reached temperature, carefully pour in the cornstarch mixture while stirring constantly. Reduce the heat to low, and cook the mixture for about 15-20 minutes, stirring constantly, until it becomes thick and gelatinous. The color should turn a light amber.

          Add Flavorings and Nuts: Remove the pot from heat. Stir in the rosewater (or orange blossom water), vanilla extract (if using), and chopped nuts into the mixture. Mix well until evenly incorporated.

            Pour and Set: Quickly pour the mixture into the prepared baking dish, spreading it evenly with a spatula. Let it cool at room temperature for at least 4-6 hours or overnight until it is set and firm.

              Cut and Dust: Once set, lift the Turkish delight from the dish using the parchment overhang. Cut it into squares or rectangles using a greased knife. Dust each piece generously with the powdered sugar and cornstarch mixture to prevent them from sticking together.

                Store and Enjoy: Place the Turkish delight in an airtight container separated by layers of parchment paper. It can be enjoyed immediately or stored for up to two weeks.
